Mood Ring Stuffed Cookies Recipe

Daaang, these are good.

Let’s be honest here. There’s no shortage of cannabis-infused cookie recipes on the internet. But good ones? Really, really good ones?

We’re talking about cookies so tasty they present you with a moral dilemma, forcing you to make tough decisions. Like, do you share them with your best friend—or keep them all to yourself? Recipes like these are as common as coconut trees in Canada. Translation: Not very.

Thank goodness we’ve got Anna from The Cannabinista in our friend circle. From savoury dishes to sweet baked goods, she’s pretty much mastered the art of cooking with cannabis. And holy smokes, we sure are grateful for this mighty fine recipe she concocted just for Mood Ring. Go ahead. Search the internet all you want. You’d be hard-pressed to find a better cookie recipe than this one.

Mood Ring Stuffed Cookies Recipe

Yield: 16 cookies

Total time to make: 1–1.5 hours

Dosages per cookie are approximate. 

IMPORTANT: Decide whether you want cookies infused with THC, CBD, or a balanced combination of both. Then choose the appropriate mixture below to make sure you get the right ratio of Mood Ring Oil, olive oil, and butter. 


INGREDIENTS

THC Dominant Cookies (Dosage per cookie: 13mg THC)

0.5 tbsp Mood Ring High THC Oil

3.5 tbsp extra virgin olive oil

¾ cup butter

OR

CBD Dominant (Dosage per cookie based on a dozen: 62mg CBD)

2 tbsp Mood Ring High CBD Oil (1 bottle)

2 tbsp extra virgin olive oil

¾ cup butter 

OR

Balanced (Dosage per cookie: 15mg CBD and 13mg THC)

0.5 tbsp Mood Ring High CBD Oil

0.5 tbsp Mood Ring High THC Oil

3 tbsp extra virgin olive oil

¾ cup butter 

+

½ cup granulated white sugar

1 cup brown sugar

2 large eggs

1 teaspoon vanilla extract

3 cups all-purpose flour 

1 teaspoon baking soda

1 teaspoon baking powder

½ teaspoon salt

100g dark chocolate bar (75–80%) or chocolate chips 

1 box of cream-filled sandwich cookies (regular or double-stuffed)

200 grams of hard-shelled, candy-coated chocolates 


INSTRUCTIONS

  1. In a large bowl or stand mixer, mix together the Mood Ring Oil, regular extra virgin olive oil, butter and sugars until combined.
  2. In a separate bowl, whisk together the flour, baking soda, baking powder and salt.
  3. Gradually add the dry ingredients to the wet ingredients, stirring until well combined.
  4. On a cutting board, slice up the dark chocolate bar into fine shavings or chunks.
  5. Fold the chocolate bar pieces into the dough mixture.
  6. Cover the dough and chill in the refrigerator for 30 minutes.
  7. Preheat the oven to 375° F.
  8. Lay out parchment paper onto a large baking tray.
  9. Take the dough out of the refrigerator and begin making balls the size of a lacrosse ball (~ 2.5”).
  10. Using a rolling pin, flatten out the balls of dough until they’re about 0.5” thick.
  11. Take a cream-filled sandwich cookie and lay it flat on the dough. Wrap dough around the entire cookie until it’s covered. Fill in any gaps with dough. If there’s extra dough, remove it.
  12. Shape the cookies to your preference. Once they are the desired shape, add hard-shelled, candy-coated chocolates to the top of each cookie and slightly press them into the dough.
  13. If you prefer wide and flatter cookies, place the cookies onto the baking tray 2” apart and bake at 375° F for 11–13 minutes. If you prefer the cookies to hold their shape, put them in the fridge for 15–30 minutes first—then transfer them to the oven and bake for 13–15 minutes.
  14. When the cookies are finished baking, allow them to cool on a cooling rack before enjoying.
  15. Cookies can be stored in an airtight plastic container for 1–2 weeks. Keep them in the fridge if you live in a warm climate.


TIPS & TRICKS

Be sure to read and understand the THC or CBD content of your Mood Ring Oil before baking. Dosages are approximate and you can expect there to be slight differences due to variations in oven equipment, heating, etc. When cooking with or consuming cannabis, always start low and go slow! (Try ¼ or less of a cookie and wait before having more. It can take up to 4 hours to feel the full effects of eating cannabis. Consuming more within this time period can result in adverse effects that may require medical attention.)

Be sure to MIX WELL when combining your wet and dry ingredients, so your Mood Ring Oil is evenly spread throughout the dough mixture. 

Use chocolate bar shavings instead of chips if you want the chocolate to melt more evenly throughout the entire cookie, giving you a bit of chocolate in every bite (and the cookie a more speckled appearance). 

It’s easier and cleaner to roll with a metal rolling pin versus a wooden one—you’ll have less dough sticking to the pin!
